Comprising prawns and tropical ingredients like mango and lemon, prawn and litchi salad is a light and breezy summer dish. This salad is also simple to craft, making it a convenient option for a quick-fix meal. Here’s an easy-peasy prawn and litchi salad recipe.
500 grams shelled and cleaned prawns 500 grams seedless litchis 1 chopped mango flesh 2 tablespoon chopped spring onion 1 tablespoon chilli flakes 1 tablespoon olive oil 1 tablespoon salt ½ a lemon A few peanuts for garnish
Mix the olive oil with lemon juice, spring onions, and chilli flakes. Marinate the prawns in this concoction for approximately 15 minutes.
Turn the heat on high and stir fry the prawns alongside the lemon juice-spring onions-chilli flakes marinade for nearly 3 minutes or till the prawns have cooked properly.
In a separate container, combine chopped mangoes and litchis; add the marinated prawns to this mixture. Your prawns and litchi salad is almost ready!
Sprinkle peanut garnish on the salad and add seasonings, as needed. Empty the salad in tasteful plates or salad bowls, and serve or savour, as required.
