Rava Kesari is one of the most cherished desserts in South India, and this incredible dish is enhanced with mangoes. The mangoes provide a sweet and tangy flavour with a bright yellow colour to the dessert, making it perfect for indulgence.
1 cup rava 1 cup mango pulp 3/4 cup sugar 2 cups water 1/4 cup ghee 10-12 cashews 10-12 raisins 1/4 tsp cardamom powder Saffron strands (optional) Yellow food colour (optional)
Roast cashews and raisins in 2 tbsp ghee until golden. Set aside.
Roast rava until aromatic. Set aside.
Boil water with saffron and food colour. Add rava to boiling water and stir continuously. Cook for 4-5 minutes.
Add sugar, mango pulp, and cardamom powder. Cook until thick. Add remaining ghee, cashews, and raisins. Stir until ghee separates.
Garnish with cashews and serve warm.
