Falafel is a healthy dish made with ground chickpeas and herbs. The coarse paste is formed into balls or patties, and deep-fried to perfection. It's crispy on the outside and tender inside.
1 cup dried chickpeas (soaked overnight) 1 small onion (chopped) 3 cloves garlic (minced) 1/4 cup fresh coriander (chopped) 1 teaspoon ground cumin 1 teaspoon ground coriander 1/2 teaspoon pepper 1 teaspoon salt 1/2 teaspoon soda 2–3 tablespoons of flour Oil for frying
Drain and rinse the soaked chickpeas. In a blender, add the chickpeas, onion and garlic. Blend until smooth.
Now, add coriander, cumin, ground coriander, pepper, and salt. Blend well.
Take a bowl and mix baking powder and flour into the mixture. Now, refrigerate for at least 30 minutes.
Make small patties as desired. In a pan, heat the oil and fry the patties until golden brown.
Remove the small falafel balls and drain them on paper towels. Serve the falafel hot with pita bread, hummus, or a fresh salad.
