Bengali Alur Dom is a mildly spiced, slightly sweet potato curry made with onions, tomatoes, and spices. It's best enjoyed with luchi, poori, or paratha. This dish is both comforting and flavourful.
5-6 medium potatoes or 18-20 baby potatoes 3-4 tbsp mustard oil 1 tej patta (bay leaf) ½ tsp Kashmiri red chilli powder ½ tsp coriander powder ½ tsp turmeric powder 1 tsp cumin powder 1 cup water ½ tsp sugar
Salt as required 2 medium onions (chopped) 1-inch ginger (peeled) 2-3 garlic cloves 1 large tomato (chopped)
Parboil the potatoes and set them aside to cool, then peel and dice.
Heat mustard oil, fry the potatoes until golden, and remove from the pan. In the same oil, fry the bay leaf until fragrant, then add the onion, ginger, and garlic paste.
Sauté the paste until golden brown, then add tomato puree, spices, sugar, and salt.
Mix and cook until oil separates from the masala, then add fried potatoes.
Pour in water, simmer on low heat, and cook until the gravy thickens.
Serve the Bengali Alur Dom hot with luchi, poori, or paratha for the best experience.
