Ghugni chaat is a popular Kolkata street food made from dried pea curry, transformed into a delicious snack with tangy toppings.
1 cup peas, soaked overnight 3 tablespoons of mustard oil 1 potato, cubed 1 tomato, chopped 1 teaspoon of cumin seeds 2 bay leaves 1 onion, sliced 1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder salt, to taste 1 teaspoon garam masala powder 1 teaspoon red chilli powder 4 green chillies 1 teaspoon ghee 2-3 tbsp coriander leaves, chopped Kasundi (mustard sauce), as required
Boil the peas in 2 cups of water for 4-5 whistles or till soft but not mushy.
Heat oil in a pan, fry the potatoes till light brown, then drain and set aside.
Temper the same oil with bay leaves and cumin seeds and sauté for a few seconds.
Add onion and fry till light brown, then add ginger-garlic paste and dry spices mixed with water.
Add chopped tomatoes and cook till mashed, then add boiled peas, fried potatoes, and green chillies.
Simmer on a low flame till the potatoes are cooked; add ghee. Garnish with all the toppings and enjoy.
