Fish soup can be one of the easiest yet most nutritious dishes to make during chilly evenings to satisfy hunger. If you are thinking of having something light and high in protein, make sure to make the soup.
1 tablespoon olive oil 1 onion 2 cloves garlic 1 carrot 1 celery stalk 1 kg fish fillets 2 cups fish broth or clam juice 1/2 cup water 1/2 teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon dried thyme 1/2 lemon Chopped parsley for garnish
Add onion, garlic, carrot, celery, fish fillets and season with salt and black pepper. Cook for 3-4 minutes.
Add fish broth or clam juice, water, and thyme. Bring to a boil.
Remove from heat and stir in lemon juice.
Serve hot with a side of chopped parsley.
