Delicious Cucumber-Radish Salad For A Quick Summer Meal

Cucumber and radish are both quintessential summer vegetables, being composed of large quantities of water. Therefore, they help keep one cool and hydrated on simmering days. Toss these vegetables together in a tasty dressing to concoct a quick and refreshing cucumber-radish salad. Here’s how.

Ingredients

1 minced garlic clove 2 cups sliced radishes 1 cup sliced and seeded cucumber 1 cup sliced onion ½ cup extra virgin olive oil 2 tablespoons white wine vinegar 1 teaspoon chopped fresh dill ½ teaspoon salt ½ teaspoon white sugar

Method Step 1

Combine radishes with salt and let them meld for about 10 minutes. Get rid of any leftover liquid and move the radishes to a bowl; add onion and cucumber slices.

Step 2

In a separate bowl, whisk together olive oil, vinegar, dill, garlic, and sugar until they’ve blended properly.

Step 3

Pour the dressing over the vegetables and toss the ingredients for mixing. Cover the salad and chill for about 60 minutes before serving. Enjoy!
