Being an edible green vegetable, broccoli is perfect for salads, soups, and stews. It is rich in vitamin C and boosts health. If you add to a recipe of soup along with almonds, you can exponentially elevate the nutritional quotient of the dish. Here is a must-try recipe for broccoli and almond soup.

1 onion 7-8 cloves of garlic Coriander leaves 1 tablespoon almonds 1 cup broccoli florets Butter as required Water as required Salt to taste

In a pan add butter and add onion. Saute the ingredients and add garlic and coriander leaves with stem.

Then add almond and broccoli to the mix and saute. Add salt to taste and water and bring the mixture to a boil or until broccoli florets soften.

Let the mixture cool for some time. Use a blender to grind the ingredients and strain the concoction through a sieve.

In a hot vessel add the puree. At this stage, you can add more water to adjust the consistency.

Add pepper powder and butter to improve the flavours and make the texture more creamy.

In another pan, saute some broccoli flowerettes and almonds for garnishing and add to the soup. Garnish with fresh cream and serve.
