Delicious And Healthy Beetroot Curry For A Wholesome Meal

Beetroots can be more than just a healthy addition to salads. You can prepare a wholesome curry with beetroot for office lunch, quick dinner prep or even breakfast meal. With these simple ingredients and steps, you can make this curry in just minutes.

Ingredients

2 Medium Chopped Beetroots Salt to taste 2.5 Cups Water 1.5 Tablespoon Oil ¼ Teaspoon Mustard Seeds ½ Teaspoon Cumin Seeds 1 pinch Asafoetida 1-2 Dry Red Chillies and Green Chillies Curry Leaves ¼ Teaspoon Turmeric ¼ Cup Finely Chopped Onion Fresh Grated Coconut

Step 1

Pressure cook beetroots with 2.5 cups of water and ¼ teaspoon salt for 3 to 4 whistles or for 7 to 8 minutes.

Step 2

Once cooked, remove beetroots and peel and chop them finely.

Step 3

In a heated pan, add oil, mustard seeds, cumin seeds, asafoetida,  broken dry red chillies, curry leaves and turmeric.

Step 4

Saute it well then add chopped onions and green chillies until onion becomes translucent. Add salt and mix well.

Step 5

Then add chopped beetroots and stir it well. Cover with a lid and let cook for 2-3 minutes on low heat.

Step 6

Remove the lid, stir it once then add freshly grated coconut. Combine it well and turn off the heat.

Step 7

Serve this flavourful sabzi with roti, rice or as a side dish.
