1 tbsp ghee 2 tbsp oil ¼ tsp mustard seeds ¼ tsp urad dal ¼ tsp chana dal 2 tbsp peanuts ½ tsp ginger, finely chopped 2 green chillies, slit lengthwise 8-10 curry leaves 1 Onion, sliced 1 tomato, chopped 2 amla, grated 1 carrot, grated 1.5 cups water 1 cup roasted vermicelli Salt, as required Finely chopped coriander leaves, for garnish
Heat oil in a pan and add the mustard, urad dal, channa dal, peanuts, green chillies, ginger and curry leaves.

Sauté for a minute or two before adding the onions and cooking for an additional couple of minutes.

Add the tomato, grated amla and grated carrot and season with salt. Stir well and cook for 5 minutes.

Add in the water and once water starts boiling, add the vermicelli.

Cover the pan with a lid and cook for 4-5 minutes or until all the water has been absorbed and the mixture is dry.

Garnish with finely chopped coriander leaves and drizzle ghee before serving hot.
