Known as lapskaus, this simple but hearty stew is enjoyed by Norwegians to warm up during the biting cold winter – meaning that’s something people from North India could use right now. Perfect to enjoy with some toasted sourdough or even with some rice on the side, this humble stew will leave you feeling fuzzy and warm on a chilly night. Enjoy the winter root vegetable bounty by throwing in some turnips and carrots for good measure.

½ kilo potatoes, peeled 2 medium-sized turnips, peeled 2 carrots, peeled 1 onion, diced 1 tablespoon all-purpose flour 1 stalk celery, diced 4-5 strips bacon, diced 2 tablespoons butter 1.5 cups chicken stock 2 bay leaves 1 tablespoon freshly chopped parsley Salt and pepper, to taste

Add the bacon to a pan with some butter and allow the fat to render, until it turns crispy.

Using a slotted spoon, transfer the bacon to a plate while you add the onion and celery to the remaining fat.

Dice the root vegetables and add them one vegetable at a time once the onion mixture is softened.

Season with salt and pepper and sprinkle the flour into the vegetable mix.

Add the bay leaves and chicken stock and adjust the seasoning, before letting it simmer for 20 minutes.

As it begins to thicken, stir constantly and check the vegetables for doneness. Serve hot with crushed bacon, a sprinkle of fresh parsley and some bread.
