Danyachi Amti, A Nutritious Vrat Fasting Dish From Maharashtra

Danyachi Amti is a Maharashtrian curry made with roasted peanuts, coconut, and aromatic spices.  This vegan-friendly dish has a creamy texture and a tangy flavour from kokum or tamarind. Serve it hot and enjoy the delightful blend of flavours.

Ingredients

1 cup skinless peanuts ½ cup grated fresh coconut 2-3 green chillies, roughly chopped 1 tablespoon oil  1 teaspoon cumin seeds 3 cups water (divided) 2-3 whole dried kokum (or 2 teaspoons tamarind paste) ½ teaspoon salt (or to taste) 2 tablespoons chopped coriander

Step 1

Roast peanuts in a pan until lightly browned. Let them cool completely.

Step 2

In a blender, combine roasted peanuts, fresh coconut, green chillies, and 1 cup of water. Blend to a smooth paste.

Step 3

Heat oil in a pan. Add cumin seeds and let them crackle for a few seconds.

Step 4

Add the peanut paste, remaining 2 cups of water, and kokum to the pan. Bring it to a boil.

Step 5

Season with salt and simmer on low heat for 3-4 minutes. Garnish with coriander and serve hot with sama rice.
