One of the best ways to use up leftover dal, combine the idea of a dal-roti meal to make these flaky and crispy dal parathas and enjoy with a bowl of yoghurt for lunch.

1 cup wheat flour ½ cup leftover dal 2 teaspoons ginger garlic paste ½ teaspoon cumin seeds ¼ teaspoon ajwain 1 teaspoon red chilli powder ½ teaspoon turmeric powder ½ teaspoon amchur powder ¼ teaspoon garam masala 2 teaspoons oil Salt, to taste Water, if needed

Combine the flour, spice powders and oil in a bowl and mix well.

Add the salt, leftover dal, ginger-garlic paste and knead the dough.

Add some water if the mixture is too dry and form into a ball, rest for 15-20 minutes.

Divide into puck-sized balls and roll out ½-inch thick parathas.

Cook on a hot tava for 4-5 minutes on one side and a couple of minutes on the other.

Brush with ghee on top and serve hot, with yoghurt on the side.
