Out of ideas to cook today? Try this simple and delicious aloo dish. Creamy and rich, it's perfect as a side dish or even as the main course, and barely takes any time to put together.
5 medium-sized potatoes, boiled and diced 1 cup plain yoghurt 1 tbsp oil or ghee 1 tsp cumin seeds ½ tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder ½ tsp garam masala Salt to taste 1 cup water Chopped fresh coriander leaves for garnish
Heat oil/ghee in a pan and add cumin seeds, letting them splutter. Stir in the turmeric, red chilli, and coriander powder, and sauté briefly.
Reduce heat, add boiled potatoes, and mix well to coat them with spices. Pour in water and cook until potatoes are tender.
Whisk yoghurt and garam masala in a separate bowl until smooth. Gradually add the yoghurt mixture to the potatoes, stirring continuously.
Season with salt and simmer for a few minutes until the flavours meld. Garnish with chopped coriander leaves.
