Dahi Tikhari is a Gujarati and Maharashtrian dish made with yoghurt and spices. The dish gets its flavour from mustard seeds, cumin, red chillies, and curry leaves. In this traditional recipe, yoghurt is added to prevent the milk from curdling and to provide the curry with a smooth texture.
1 cup yoghurt 1 tbsp besan 1 tbsp oil ½ tsp mustard seeds 1 dry red chilli ½ tsp cumin seeds 5-6 curry leaves ½ tsp turmeric powder ½ tsp red chilli powder Salt to taste 1 cup water Coriander leaves for garnish
Whisk the yoghurt with besan and water until it becomes smooth in texture.
Heat oil in a pan and add mustard seeds, cumin seeds, dry red chillies, and curry leaves.
Add turmeric and red chilli powder and mix it well.
Pour the mixture into a pan and stir continuously to avoid curdling.
Simmer for 5-7 minutes until the gravy thickens.
Garnish with coriander leaves, and serve the Dahi Tikhari with rice or roti.
