Dabeli is a slightly more fulfilling and stuffed variant of vada pav. It is delicious, satiating, and a treat for your tongue. If you are planning to make it at home, note the recipe for a special spice mixture.
½ cup coriander seeds 2-3 big black cardamom, star anise 1 medium cinnamon stick broken pieces 2 tsp cumin seeds 1 tsp fennel seeds, ginger powder 1-2 bay leaves 3-4 cloves 1 tsp black peppercorn, black salt 2-3 whole mace/javitri, red chillies ¼ cup of grated dry coconut, sugar 1 tbsp sesame seeds, oil 2-3 tbsp Kashmiri red chilli powder
Heat a saucepan and dry roast cumin, fennel, and coriander seeds.
Keep them aside and roast star anise, cardamom, mace, cloves, pepper, and bay leaves.
Let the whole spices cool off and dry roast coconut, sesame seeds, and red chillies.
After cooling the ingredients, drop them in a grinder.
Grind the spices into a coarse paste.
Add sugar and some oil. Combine well, and dabeli masala is ready.
