We all know cauliflower as the less attractive part of aloo gobi, but the true potential of the vegetable shine when it's roasted. This simple recipe is only a few steps and results in a delicious, healthy meal.
1 large cauliflower ½ onion 4 cloves garlic 2 tbsp lemon juice ⅓ cup olive oil 1 ½ tsp yellow curry powder ¼ tsp ground cinnamon ½ tsp salt ¼ tsp ground black pepper
Whisk the garlic, lemon juice, olive oil, curry powder, cinnamon, salt, and pepper together.
Separated the cauliflower florets and onion slices and toss in the oil mixture.
Roast in the oven at 220°C for 25 to 30 minutes until well browned.
