Making kimchi is a time-consuming task, but a stress-relieving one. However, traditional kimchi takes time to ferment. What if you are craving some Korean condiment right now? You can try making instant cucumber kimchi at home.
4-5 cucumbers 1 sliced onion 1 tsp salt 1 tbsp minced garlic 2-3 tsp sugar 1 tbsp fish sauce 1 tsp sesame seeds ½ tsp grated ginger 2-3 tbsp gochugaru 2-3 tbsp spring onions
Wash cucumbers and cut them in the desired shape. You can also slice them like a spring.
Sprinkle salt and keep cucumbers aside for 30 minutes. Drain the excess water.
Toss cucumber with other sliced vegetables. Meanwhile, combine sauces, salt, sugar, and Korean chillies in a bowl.
Add vegetables to the kimchi paste. Make sure to coat them nicely with this spicy blend.
Taste the seasoning and adjust the flavours before leaving the kimchi to ferment for a couple of hours.
Enjoy cucumber kimchi fresh with paratha, noodles, and dal-rice.
