Cucumber and corn - the lovely combination of both helps make delicious salad, which is a meal in itself. Let us look at the recipe.
2 cups fresh corn kernels 2 medium cucumbers, diced 1 red bell pepper, diced 1/4 cup onion, finely chopped 1/4 cup fresh cilantro, chopped Juice of 1 lime 2 tbsp extra-virgin olive oil Salt and pepper to taste
Mix fresh corn kernels, diced cucumbers, red bell pepper, and finely chopped red onion in a bowl.

In a small bowl, combine lime juice, extra-virgin olive oil, salt, and pepper.

Drizzle the dressing over the salad and toss gently. Refrigerate for 30 minutes to let the flavours meld.
