Peanut chikki is one of those snacks that can make anyone feel nostalgic. Apart from being tasty, chikki is also a great source of nutrients due to the ingredients involved, such as jaggery and peanuts, and it is quite uncomplicated to make at home.
1 cup peanuts, roasted and crushed 3/4 cup jaggery, grated 1 tablespoon ghee 1/2 teaspoon cardamom powder (optional)
Roast peanuts, let them cool, and crush them coarsely.
Heat ghee in a pan, add grated jaggery and cook on low heat until it melts and becomes syrupy. Test by dropping a small amount in water – it should form a hard ball.
Add crushed peanuts and cardamom powder to the jaggery syrup. Mix well.
Quickly pour the mixture onto a greased surface or parchment paper. Flatten with a rolling pin to the desired thickness.
While still warm, cut into squares or desired shapes.
