A popular South Indian snack that is prepared during special occasions also doubles up as a great munchy to have on stand-by due to its long shelf life. Resembling flat noodles or ribbons from which they derive their name, here’s how you can make this at home.
1 cup gram flour ¼ cup rice flour 2 teaspoons melted butter 1 teaspoon turmeric powder 1 teaspoon red chilli powder 1 teaspoon asafoetida 1 tablespoon sesame seeds Water, for kneading Salt, to taste Oil, for deep-frying
Combine all the dry ingredients for the pakoda in a bowl and mix in the melted butter.
Pour in enough water to knead the mixture into a soft dough, without over-working it.
Rest for 10-12 minutes while you heat the oil in a deep pan and portion the dough.
Add one portion into the South Indian pakoda press and apply pressure to release it into the hot oil.
Fry on low heat for 3-4 minutes before turning up the flame and continuing to brown further for a minute.
Remove from the hot oil onto a kitchen towel and repeat the process. Cool completely before storing in an air-tight container.
