The Japanese-style battered prawns are a mildly flavoured delicacy which allows the sweetness of fresh seafood to shine through. Pair it with some sriracha to pack on the heat, or enjoy with a sweet chilli dipping sauce for the most perfect snack to pair with a cup of tea.
12 large prawns, deveined 1 cup all-purpose flour ½ cup cornstarch 1 teaspoon baking powder 1 teaspoon salt 1 cup ice-cold water/soda Oil, for deep-frying
Combine the flour, cornstarch, baking powder and salt in a bowl.
Add the iced water to the dry mixture, whisking gently until just combined.
Heat the oil in a deep frying pan while you dip each prawn in the batter to coat it evenly on all sides.
Fry the prawns in batches for 2-3 minutes over medium heat, until golden but not browned.
Remove and place on paper towels to drain excess oil. Serve hot.
