Mullu murukku is a traditional, spiked and crunchy savoury snack made with rice and urad dal flour. It is an ideal deep-fried treat to prepare during festivals, enjoyed with sweets or a cup of masala tea.
2½ cups rice flour ½ cup urad flour 2 tbsp sesame seeds (til) ½ tsp ajwain (carom seeds) Pinch of hing (asafoetida) 2 tbsp butter, softened 1 tsp salt ½ cup thick coconut milk Water (for kneading) Oil (for frying)
In a large mixing bowl, combine 2½ cups rice flour and ½ cup urad flour.
Add 2 tbsp sesame seeds, ½ tsp ajwain, pinch of hing, 2 tbsp butter, and 1 tsp salt.
Pour in ½ cup thick coconut milk and mix until the flour is combined.
Add water gradually and knead into a smooth, soft dough. Place the dough into a greased chakli maker fitted with a star mould.
Press the dough onto a butter paper, forming spiral-shaped murukkus.
Deep fry in hot oil on medium flame until crispy, then drain on a paper towel.
