Crispy moong dal vadas are a perfect pairing with South Indian spiced sambar. They are lightweight, slightly aromatic, and taste delicious. Instead of sambar, you can soak them in water and serve them with curd, chutney, and a few spices.
2 tbsp onion 1 cup moong dal 1 tsp cumin seeds Salt to taste ¼ cup water Oil for frying 3 tbsp rice flour ¼ tsp baking soda 2 tbsp coriander 1-inch ginger 2 green chillies
Soak moong dal for four hours and blend it into a paste along with ginger, cumin seeds, coriander, and green chillies.
Add finely chopped coriander and onion. Sprinkle the seasoning and mix well.
Adjust the consistency of the batter by adding some water.
Add baking soda and stir everything.
Drop small vadas in hot oil and cook them until they are golden brown and crispy.
Serve crispy vadas with sambar.
