Crunchy, golden and addictive, these pakodas made with tender lady’s finger is a refreshing change from the usual potato or onion varieties.
250 grams lady’s finger, cubed 2 eggs ¼ cup all-purpose flour 1 teaspoon red chilli powder 1 cup breadcrumbs Salt and pepper, to taste Oil, for deep-frying
Whisk the eggs in a bowl and season with salt before adding the cubed okra to rest for 10 minutes.
Combine the dry ingredients in a ziplock bag and shake well.
Meanwhile, heat the oil to get it ready for frying.
Using a slotted spoon, drain the egg off the lady’s finger as much as possible and add it to the bag with the dry ingredients.
Clutch the mouth of the bag with your palm and shake well to coat the okra completely.
Break off clumps, if any and drop individual pieces into the hot oil.
Fry until golden brown and crispy. Serve hot.
