Also known as Sungte Vada, this traditional Konkani dish sings with the flavours of prawns and coconuts. Check out the recipe and give it a try with your evening tea or coffee.

¾ cup shrimp, chopped ½ cup boiled potato, mashed ½ cup coconut, grated 1 onion, finely chopped ½ tsp coriander powder ½ tsp cumin powder ½ tsp red chilli powder ¼ tsp tamarind pulp ¾ cup semolina Salt, to taste 1 tbsp coriander leaves, chopped Oil, to fry

Place the shrimp, potato, coconut, coriander, cumin, red chili, tamarind and salt in a bowl.

Mix well and add the onions and coriander leaves. Mix again and divide the mix into equal-sized balls.
Press the balls into flat vadas, coat well with semolina and set aside.
Heat oil in a pan and shallow fry the Prawn Vadas until golden-brown on both sides.

Serve the Prawn Vadas with chutney, salad and a cup of tea or coffee.
