Idlis are a much-loved breakfast food and snack all over India, but in Hyderabad, there's a special twist. The Spot Idli is cooked in a tomato and onion sauce for an idli that's crispy and full of flavour.
1 tbsp butter 2 tbsp vegetable oil ½ cup chopped onions 2 tsp finely chopped green chillies ½ cup finely chopped tomatoes 10-12 curry leaves 2 tsp finely chopped ginger 2 tsp finely chopped garlic 1 tsp Kashmiri red chilli powder 2 tsp idli podi 2 tbsp finely chopped coriander 1 cup idli batter
Heat butter and oil in a skillet. Add onions, green chillies, tomatoes, curry leaves, ginger, and garlic. Sauté for 2 minutes.
Add chilli powder, idli podi, and cilantro. Sauté for 30-40 seconds. Divide the masala into 4 parts and place them in opposite corners of the pan.
Pour 2-3 tablespoons of idli batter over each masala mound. Reduce heat to medium, cover the pan, and cook for 4-5 minutes until lightly set.
Remove the lid, flip the idlis using a large ladle or spatula, and cook uncovered for 2 minutes.
Transfer to a serving plate. Drizzle with ghee and serve hot for breakfast or a snack!
