A street food snack from Ahmedabad, these green moong dal-packed fritters are the perfect dish to go with your evening tea. Here’s the recipe to try out.
1 cup green moong dal 2-3 green chillies, finely chopped 1 tsp ginger, grated ½ tsp asafaoetida 2 tbsp coriander leaves, chopped Salt, to taste Water, as required Oil, for frying Sliced onions, for garnish Fried green chillies, for garnish
Soak the green moong dal in plenty of water for 4-5 hours or overnight.
After soaking it, rub the moong dal between your hands until the green skin comes off. Keep rubbing until 70 per cent of the skin comes off.
Transfer the soaked dal into a grinder and add a teaspoon of water to make a fine paste.
Place the batter in a bowl, then add green chillies, ginger, asafoetida, coriander leaves and salt. Mix well.
Heat oil in a wok and add the batter to make small, round vadas. Fry the vadas until golden brown then remove onto a paper towel.
Serve hot with sliced onions and fried green chillies on the side.
