These deliciously fluffy and crunchy deep-fried treats are the perfect precursor to a relaxed meal to bring in the weekend.
¾ cup all-purpose flour 1 tablespoon sugar 2 eggs 1 teaspoon baking powder ½ cup whole milk 2.5 cups corn, thawed 1 teaspoon paprika powder 2 spring onions, chopped Vegetable oil, for deep-frying 2-3 tablespoons maple syrup Salt, to taste
Make a batter with the flour, sugar, baking powder, salt, eggs and milk.
Heat the oil in a vat while you add the paprika, spring onions, corn kernels and mix well to combine.
Adjust seasoning, if necessary and drop bite-sized balls of the batter into the hot oil.
Fry them for 2-3 minutes on all sides until golden-brown.
Remove onto a kitchen towel and drizzle maple syrup over the fritters. Serve hot.
