The soft and moist bombil or Bombay duck gets a crunchy twist in this Malvani-inspired rava fry that is best enjoyed with a glass of cold beer, or as an accompaniment to your meal of fish curry and rice. Tap to see the full recipe.

6 fresh Bombay duck, cleaned Juice of 1 lemon 1 teaspoon turmeric powder 1 teaspoon red chilli powder 4 green chillies 8-10 cloves garlic, peeled 1-inch piece ginger ¾ cup semolina ½ cup rice flour 1 tablespoon garam masala Salt, to taste Oil, for pan-frying

Grind the green chillies, garlic and ginger to a fine paste, with the addition of some salt.

Combine it with the spice powders, lemon juice and salt to make a thick paste.

Apply this fragrant paste on all sides of the bombil and refrigerate for 10 minutes.

Mix the semolina and rice flour in a bowl and coat the fish with this mixture, before placing in a pan with hot oil.

Fry the fish on both sides until golden-brown and crispy. Serve hot.
