Made with locally cultivated bananas in the tropical state, banana fritters are a staple delicacy which is sweet and crisp – ideal to eat with a cup of tea. Make these at home to enjoy with a sprinkling of powdered sugar or a scoop of ice cream.
2 ripe bananas 1 cup all-purpose flour 2 tablespoons rice flour 2 tablespoons sugar ¼ teaspoon baking powder ¼ teaspoon turmeric powder 1 pinch salt Water, as needed Oil, for deep frying
Combine the flours, baking powder, turmeric powder, salt and sugar in a bowl.
Slice the bananas into thin vertical strips and place on a separate plate.
Add water to the dry mixture to make a fairly thick batter while you heat the oil in a deep pan.
Dip each slice of banana in the batter to evenly coat on all sides before gently dropping in the hot oil.
Fry for 2-3 minutes until the outer coating is cooked and crisp. Serve hot.
