Baingan pakora is a popular Indian snack that people often pair with their evening tea. If you have a craving for eating fried pakoras, you can try making them with the healthy ingredient, baingan (eggplant).
2 eggplants 1 cup besan ½ teaspoon turmeric powder ½ teaspoon cumin powder ½ teaspoon coriander powder A pinch of hing 1 tablespoon chopped curry leaves Salt to taste Oil for frying
Slice the eggplants into circular disks. Set aside.
Mix besan, curry leaves, turmeric powder, cumin powder, coriander powder, hing, salt, and water.
Heat some oil. Coat the baingan slices in the besan batter.
Deep fry the slices till crispy and drain excess oil.
Pair with chutney and serve hot.
