Easy to make and different from the usual potato fries packed with carbohydrates, these chickpea fries are gluten free with the perfect balance of crunchy and fluffy.

1 onion, finely chopped 3 cloves garlic, minced 2 cups chickpea flour (besan) 3.5-4 cups water 1 tablespoon olive oil 1 teaspoon coriander powder 1 teaspoon fresh thyme Salt, to taste Oil, for deep-frying

Heat the olive oil in a pan and saute the onion, garlic and thyme for 3-4 minutes.

Add the coriander powder, followed by the water and season with enough salt.

Add the chickpea flour and whisk continuously until you have a thick, semi-solid consistency.

Transfer the mixture to a well-greased dish and cool completely in the refrigerator for 4 hours.

Once the mixture solidifies, cut into thick stick-shaped pieces and drop into the hot oil to fry until golden brown. Serve hot.
