Crispy And Delicious Chettinad Paniyaram Recipe

Chettinad Kuzhi Paniyaram Recipe made authentic way with raw rice, urad dal, onions, chillies and curry leaves which results in soft kuzhi paniyaram or appe all the time. Here is how to make it: 

Ingredients

Paniyaram Batter 1 cup raw rice ¼ cup whole white urad dal ¼ tsp fenugreek seeds For Tempering 2 tbsp oil 1 tsp mustard seeds 1 tsp split urad dal ¼ tsp asafoetida 1 large onion 1 tbsp ginger 2 no green chillies 1 sprig of curry leaves

Step 1

Take rice and dal in a bowl and wash them well, add fenugreek seeds and soak them for 4 hours. 

Step 2

Drain and add it to a grinder or blender and puree till smooth. 

Step 3

In a large container, add salt and mix well. Leave to ferment for at least 8 hours.

Step 4

Heat oil in a pan, add mustard and urad dal and let them sizzle. Add asafoetida and curry leaves and let them sizzle. 

Step 5

Add in green chillies, ginger and onions and saute. Season salt and mix well. 

Step 6

Add this to the batter and mix well. Heat a paniyaram pan with some oil. 

Step 6

Pour a ladleful of batter into each hole and cover. Flip over and cook.
