This unusual but simple hummus recipe might be surprising as a combination but works to taste just as great in all kinds of food – from sandwiches, wraps, chips and pita bread.
1 cup cooked chickpeas 3 cloves garlic 4 tablespoons olive oil ¼ cup creamy peanut butter 3 tablespoons lemon juice 2 teaspoons cumin powder ¼ cup Greek yoghurt 2 tablespoons roasted peanuts 1 tablespoon red chilli flakes Salt, to taste
Add the cooked chickpeas, garlic, peanut butter, olive oil, lemon juice and chilli flakes to a food processor and grind to a thick paste.
Add the Greek yoghurt, salt and grind into a smooth paste.
Depending on how thick your hummus is, add some more Greek yoghurt and olive oil.
Once ready, transfer to a serving plate and chop the roasted peanuts to sprinkle over the hummus.
Enjoy with pita bread, chips, wraps or sourdough toast.
