Creamy Mushroom Soup is a comfort food that is perfect for a cosy meal. Made with fresh mushrooms, cream and mild spices this soup will warm you up in no time. Serve as an appetiser or with some garlic bread for a light dinner.
200g mushrooms sliced 2 tbsp butter 1 small onion 1 tbsp maida 2 cups milk ½ cup fresh cream 2 cups vegetable stock or water Salt to taste ½ tsp black pepper powder Fresh parsley or coriander
Melt butter in a large pan. Add the chopped onions and sauté until they are translucent.
Add the sliced mushrooms and cook until they are soft and slightly browned.
Add maida to the mushroom mixture and stir well to remove the raw flavour. This will thicken the soup.
Gradually add milk and vegetable stock, stirring well to avoid lumps. Let it simmer for 5-7 minutes.
Let it cool slightly and then blend it smooth using a hand blender. Return the blended soup to the pan. Add fresh cream, salt and pepper.
Let it simmer for 2 more minutes. Garnish with fresh parsley or coriander and serve hot with crusty bread.
