This gravy includes a rich blend of creamy cashew sauce and tender paneer cubes, simmered with aromatic spices, for a luxurious twist on traditional paneer dishes. Here is a recipe to try:
200 g paneer, cubed 1/2 cup cashew nuts, soaked 1 large onion, chopped 2 tomatoes, chopped 3 cloves of garlic 1-inch piece of ginger 1 green chilli (optional) 1/2 teaspoon cumin seeds 1/2 teaspoon turmeric powder
1 teaspoon red chilli powder 1 teaspoon of coriander powder 1/2 teaspoon garam masala 1/2 cup of fresh cream 2 tablespoons of ghee or oil Salt to taste Fresh coriander leaves for garnish
Blend soaked cashews, onion, tomatoes, garlic, ginger, and green chilli until smooth.
Heat ghee in a kadai and fry paneer until golden. Set aside.
In the same kadai, add cumin seeds and cashew paste. Cook until thickened.
Stir in turmeric, red chilli powder, coriander powder, and salt. Cook for 2-3 minutes.
Add the fried paneer and mix gently. Adjust consistency with water.
Stir in fresh cream and garam masala. Simmer for 2-3 minutes.
Garnish with coriander leaves. Serve hot with naan or rice.
