Immerse yourself in the luxurious flavours of Brown Rice Payasam, a gluten-free Indian dessert infused with aromatic spices and creamy coconut milk.
1/2 cup brown rice 4 cups unsweetened almond milk 1/4 cup jaggery 1/4 tsp cardamom powder 2 tbsp chopped nuts (almonds, cashews, pistachios) 1 tbsp raisins (optional) A pinch of saffron strands (optional) 1 tbsp ghee (clarified butter)
Rinse and soak the brown rice in water for about 30 minutes. Drain and set aside. In a Pan , heat the ghee.
Add the drained brown rice to the pan and sauté. Pour in the almond milk and cook until it thickens.
In a separate pan heat the jaggery with a few tbsp water over low heat until it melts and forms a syrup. Set aside.
Once the rice is cooked, add the jaggery syrup, cardamom powder, chopped nuts, and raisins.
Mix well and cook. Add saffron strands Serve it warm or chilled, garnished with chopped nuts.
