Vada Pav is Mumbai's favourite snack and street-food. It is loved through out the year but is even more special during the monsoon when people crave a hot, fried snack. It pairs best with a cup of masala chai.
4 potatoes 1 tsp mustard seeds 1 tsp turmeric powder 2 green chilies 1-inch ginger 3 garlic cloves Coriander leaves
1 cup besan (chickpea flour) 1 pinch baking soda 1/4 tsp red chilli powder 8 pav Spicy garlic chutney Tamarind chutney Green chutney Oil
Heat oil in a pan, add mustard seeds and finely chopped green chilies, grated ginger, and minced garlic.
Add turmeric powder and mashed potatoes with salt and chopped coriander. Let it cool, then shape into small balls.
In a bowl, mix besan, baking soda, turmeric powder, red chilli powder, and salt. Add water and make a batter.
Heat oil in a kadhai. Dip each potato ball in the batter and fry till golden brown.
Slice the pav, spread chutneys, place a vada inside, and serve with fried green chilies.
