As winter sets in, indulging in rich, warm sweets becomes irresistible. Poosanikai Halwa, made from white pumpkin, is a delicious and nutritious South Indian dessert that’s perfect for the season.
2 cups grated white pumpkin (poosanikai) 1 cup sugar 2 tbsp ghee ¼ tsp cardamom powder 10-12 cashews 8-10 raisins A pinch of saffron
Squeeze the grated white pumpkin to remove excess water.
Heat ghee in a pan, fry cashews and raisins until golden, then set aside. In the same pan, sauté the grated pumpkin for 5-7 minutes until the raw smell disappears.
Add sugar and cook on low heat until the mixture thickens and starts leaving the sides of the pan.
Mix in cardamom powder and saffron. Garnish with fried cashews and raisins.
