Also known by its nickname Caballeros Pobres, which roughly translates to ‘poor man’s bread’, this Yucatan recipe is far from poor; a deliciously rich and texturally diverse French toast.
1 French baguette 4 eggs ½ cup milk ¼ cup condensed milk 1 teaspoon vanilla extract 1 tablespoon sugar Butter, for frying
Separate the egg whites and yolks and beat the whites until they form stiff peaks.
Add the yolks one by one to this egg white mixture and fold it in gently. Set aside.
Mix together the milk, condensed milk, vanilla extract and sugar.
Slice the baguette into 1.5-inch thick slices and soak in the milk mixture for a couple of minutes on each side.
Meanwhile, warm the butter in a frying pan until it is bubbly and foamy.
Dip the milk-soaked bread into the egg mixture and transfer to the butter.
Fry on both sides for 3-4 minutes, on a medium-high heat until they are golden-brown in colour.
Serve warm, drizzled with syrup and slivers of chopped almonds.
