Andhra style lemon rice is slightly different than usual lemon rice from Tamil Nadu. The recipe is created in two parts where gojju mixture is prepared first and rice is prepared separately, and then both are combined together to create a tantalising lemon rice dish. This recipe is perfect for repurposing leftover rice.

Ingredients

½ Cup Peanuts 1 Tablespoon Mustard 2 Tablespoon Urad Dal 2 Tablespoon Chana Dal 1 Tablespoon Cumin 3 Chopped Chillies 2 Inch Ginger, Finely Chopped Curry Leaves 2 Dried Red Chilli ¾ Teaspoon Hing 1 Teaspoon Turmeric Salt To Taste Leftover Rice Lemon Coriander Leaves

Step 1

Start making gojju by roasting peanuts in ¼ cup oil and add mustard, urad dal, chana dal and cumin seeds until they start to splutter.

Step 2

Add chilli and ginger and saute well.

Step 3

Then add curry leaves and dried chilli to the mixture and fry well until aromatic.

Step 4

Turn off the flame to add hing, turmeric and salt. Mix until well combined.

Step 5

Make lemon rice by seasoning leftover rice with lemon juice and coriander.

Step 6

Add the gojju mix in the rice and combine it well.

Step 7

Serve it with coconut chutney.
