The classic South Indian recipe for this fermented ‘pancake’ involves very minimal effort to make and ferment the batter. Enjoy biting into a freshly made dosa over the weekend and make breakfast a special moment.
1 cup urad dal 2 cups kolam rice Salt, to taste Water, for soaking and grinding Oil or ghee
Rinse and soak the rice and urad dal separately in clean water for 6-7 hours.
Use a wet grinder or blender to grind the urad dal until fluffy followed by the rice, to get a smooth consistency to touch.
Combine both batters in a large bowl and add salt to taste before allowing it to sit in a larger container.
Rest the batter for 8-10 hours or overnight, until it rises considerably - turning bubbly.
Spread the ready batter out on to a hot pan by the ladleful and drizzle some oil to cook on both sides for 2-3 minutes. Serve hot.
