A specialty in coastal regions across India, prawns pickle masala is a spicy and tangy condiment that pairs well with both rice-based dishes as well as flatbreads. Let’s explore a simple homemade prawns pickle masala recipe.

1 kg king prawns 1 tbsp turmeric 12 dried red chillies 1 piece of ginger 15–20 garlic cloves 4 tbsp cumin seeds 3 cups of white vinegar 1 dash of salt

Rinse, shell, and devein the prawns. Set them out to dry on a paper towel.

Combine the salt and turmeric powder, and douse the prawns in this mixture. Let them marinate for about an hour.

Grind the chillies, ginger, garlic, and cumin seeds; introduce some vinegar to the concoction. Stir till a dense, wrinkle-free paste is formed, and set it aside.

Stir fry the prawns over medium heat till they become golden. Strain them on a paper towel and let them cool.

Fry the paste till it becomes a thick masala. Season it with vinegar and salt, and cook the masala for about 15 minutes over medium heat. Let it cool.

Put the prawns in a glass pickling jar, and add the cooled masala mixture over them.

Blend the prawns and the masala well; set them aside to merge properly for a few days before consuming.
