Medu vada is a classic South Indian delight for breakfast, lunch, or dinner. Classic salted doughnuts paired with coconut chutney, tomato chutney, and sambar are a treat for your taste buds. Try this recipe.
2 green chillies ¼ cup chana dal 1 cup urad dal Salt to taste 2 tbsp rice flour 2 tbsp dry coconut A pinch of hing 7-8 curry leaves 1-inch ginger Oil for frying 1 tbsp coriander leaves
Wash and soak dal for about 3-4 hours. Drain the excess water and grind it into a smooth paste.
Mix the vada batter with rice flour, grated ginger, dry coconut, coriander leaves, green chillies, hing, and curry leaves.
Whisk the mixture to trap air inside it and make it lightweight. Drop a small amount of it in water to see if it floats.
Use a banana leaf or ladle to shape the batter into a doughnut and gradually drop it in the hot oil.
Cook the vada on both sides until it is crispy.
Enjoy vada hot with sambar and chutney of your choice.
