The right combination of fluffy insides and crispy outsides, these breakfast potatoes can be eaten as is or with fried eggs and toast, if you want to treat yourself.
3 potatoes, diced 2 tablespoons butter 2 tablespoons olive oil 1 teaspoon garlic powder 1 teaspoon paprika powder 1 teaspoon onion powder 2 whole garlic cloves, crushed lightly 1 sprig oregano/thyme Salt and pepper, to taste
Heat the butter and olive oil in a large skillet and add the spice powders and garlic cloves.
Sauté everything until aromatic, before adding the thyme and potatoes.
Stir everything well to let the spices and fat coat the surface of the potatoes.
Cook the potatoes for 15-20 minutes on a medium flame, stirring periodically, until the outside is browned and crispy and the insides are fluffy.
Serve warm with ketchup or eat with fried eggs and toast.
