One of the most unique chaat recipes you will come across in Odisha is Dahibara Aloodum. Two quite different dishes are assembled to prepare this lip-smacking dish. Here is how you can make it at home.
For Bara 1-inch ginger 2 cups beaten curd 1 cup urad dal 1 tsp red chilli powder Salt to taste 1 tsp black pepper powder 2 chopped green chillies 3 garlic cloves For Garnishing 1 chopped onion Sev Chopped coriander leaves 1 chopped tomato
For Aloodum 3-4 potatoes 1 tbsp ginger-garlic paste 2 tsp coriander powder 1 onion 1 tsp garam masala 1 tsp cumin seeds 2 tsp red chilli powder Salt to taste 3 tsp oil 1 tsp cumin powder
Boil potatoes in a pressure cooker and keep them aside to cool off.
Heat a kadhai and saute cumin seeds and ginger garlic paste. Cook chopped onions until brown.

After soaking, grind urad dal with green chillies, salt, ginger, and garlic. Let this batter ferment and thicken.
Deep-fry baras until crispy and soak in water until swollen. Toss them in a spiced curd mixture.
Combine aloodum and dahibara in a bowl and garnish with coriander leaves, onion, and tomatoes before digging in.
