A versatile recipe that can be adapted using a variety of stuffings like chocolate hazelnut paste, bananas and caramel sauce or the classic PB & J, this stuffed French toast is sure to satiate your sugar cravings.

2 thick slices brioche 2 tablespoons fruit preserve 1.5 tablespoons peanut butter 2 eggs ¼ cup milk 1 teaspoon cinnamon powder 1 pinch salt 1 teaspoon vanilla extract 2 tablespoons butter Maple syrup, for drizzling

Whisk together the eggs, milk, cinnamon, vanilla and salt in a bowl to make a custard.

Spread the peanut butter on one slice of brioche and fruit preserve on the other, before sandwiching the two.

Soak the sandwich in the egg custard for 3 minutes on each side, while you heat the butter in a pan.

Once the fat is foamy, gently transfer the custardy sandwich to the pan and cook for 4 minutes on each side.

Once the French toast is golden-brown and cooked through, transfer to a plate and slice through the middle.
