Sprout Chaat is a healthy, tangy Indian salad made with mixed sprouts, fresh vegetables such as tomatoes, onions, and cucumbers, and seasoned with chaat masala and lemon juice. It is a nutrient-rich snack packed with proteins, vitamins, and fibre.
2 cups mixed sprouts 1 onion 1 tomato 1 cucumber 1 carrot 1-2 green chillies 1 tbsp fresh coriander leaves 1 tbsp fresh mint leaves 1 tsp chaat masala 1/2 tsp roasted cumin powder 1/2 tsp red chilli powder Juice of 1-2 lemons Salt Sev or crushed papdis
If using store-bought sprouts, rinse them thoroughly. If making your own sprouts, soak the legumes overnight, drain the water, and let them sprout in a warm place for 1-2 days until small shoots appear.
In a large bowl, combine the chopped onion, tomato, cucumber, carrot, and green chilies. Add the mixed sprouts to the bowl with the vegetables.
Add the chaat masala, roasted cumin powder, red chilli powder, and salt. Mix well to coat the sprouts and vegetables with the spices.
Squeeze the lemon juice over the mixture and toss everything together to combine the flavours.
Garnish with chopped coriander and mint leaves. If desired, add a handful of sev or crushed papdis for extra crunch.
