Embrace the rainy season with a comforting bowl of Mushroom Soup, featuring sautéed mushrooms in a velvety broth, perfect for a cozy monsoon evening.
(450g) mushrooms, sliced 1 onion, chopped 2 cloves of garlic, minced 2 carrots, diced 4 cups vegetable broth 1 cup milk or plant-based milk 2 tbsp butter or olive oil Salt and pepper to taste Fresh herbs for garnish (optional)
In a pan, melt the butter. Add the chopped onion and minced garlic, and sauté.
Add the sliced mushrooms, diced carrots and vegetable broth and bring the mixture to a simmer.
Using a blender carefully puree the soup until smooth. Stir in the milk.
Season the soup with salt and pepper to taste. Adjust the seasonings accordingly. Serve hot.
